An invitation to dine at Chef Owner Jim Rua’s Café Capriccio in downtown Albany is an invitation to share in all things Tuscan. On each of four consecutive nights, October12-15, 2015, a different group of twelve Chaîne des Rôtisseurs members and guests enjoyed the relaxed and intimate atmosphere of Café Capriccio’s private dining room. The creativity and charm of Chef Rua knows ...

Dinner at the Wheatleigh

Article and Photos by Bailli William M. Harris

In 1893 Henry H. Cook decided that an appropriate wedding present for his daughter would be a modest summer cottage surrounded by 380 acres of land. And so was born Wheatleigh, based upon a 16th century Florentine Palazzo and located in Lenox, Massachusetts. All I can say is that Henry must have loved his daughter very much as this country estate is nothing less than spectacular.

The property has now been ...

So What’s a Supper Club and Why an Ode?

By Stuart Horn, Vice-Conseillor Gastronomique, Bailliage d’Albany

Why choose “Ode to a Supper Club” as the theme for a Chaîne black-tie induction dinner? Let’s parse it. An ode is a poem of praise, or as we former English majors like to say, “a lyric poem typically of elaborate or irregular metrical form and expressive of exalted or enthusiastic emotion.” Got that? OK.

A supper club was typically a mid-western American dining social and boozing ...

Culinary Institute of America – 3/7/15

If the CIA in Langley was as Good as the CIA in Hyde Park, the World Would be a Safer and Better Place

So we have to transport ourselves from upstate New York to Langley, VA to dine at the CIA? Should we bring coins for the canteen vending machines? Oh, not that CIA? You mean the other CIA in Hyde Park, NY? Ah, that’s more like it!

It’s no state secret that the Culinary Institute of America is, in the words ...

Saratoga Golf & Polo Club: A Return to Elegance and Gentility – 1/11/15

Baby, it was cold outside (22 degrees to be exact). Neither horsemen nor horses competed on the snowy polo ground. No golfers toiled on the fabled course. Tennis courts were unpopulated, and the swimming pool was covered. Bleak, right? Not.

Because, baby, it was warm inside the Saratoga Golf & Polo Club as on January 11th 61 members and guests of the Albany Bailliage escaped from winter with a black-tie event in an historic building. Bailli William Harris and his team ...

Chaîne Professionals Dinner – 12/1/14

Our professional members really knock me out. Their generosity must spring from some yet undiscovered gene that impels them to astonish us by constantly exceeding our expectations. This trait was most assuredly in evidence at our professionals only dinner held at Angelo’s 677 Prime in Albany on Monday, December 1, 2014. As originally envisioned, these dinners would be simple, informal and affordable and limited to our professional members. The Albany Chaine would provide the wine from odd bottles culled from ...

Mazzone Hospitality – 11/9/14

Restaurateur and entrepreneur Angelo Mazzone never ceases to amaze us! When we heard that he was opening a new corporate headquarters and the first event would be this Chaine dinner, we were honored and excited to see what he and his team had in store for us. Sixty members and guests eagerly arrived at his first class facility on November 9, 2014, and were greeted by a sight very reminiscent of our Chaine origins- a pair of succulent geese roasting ...

Food Truck Event – 9/7/14

If You Can’t Beat ‘Em, Join ‘Em!

That’s exactly what 60 conferes and guests did on 09/07/2014, a perfect end of summer day! Summoned by Bailli Bill Harris with the traditional letter of invitation, rather than a Twitter blast, we arrived at the spectacular Voorheesville home of Dame de la Chaine Chick Led Duke to partake in the food truck phenomenon that has been sweeping the nation since Roy Choi first served his Korean short rib tacos from a truck in ...
