Maitre Rotisseur Mark Delos will host a dinner at Franklin Square Market in Saratoga Springs. For those of you who have not been there, Franklin Square Market is upstate’s version of Eataly in New York City. And Mark is well known to the Chaine, having overseen numerous dinners while as a top executive at Mazzone Hospitality for decades.

We had hoped to have this dinner at Noah’s in Saratoga, but the restaurant is still under construction. Our November dinner will now take place at the Regent Restaurant in the Brookmere, a lavish new hotel situated on the site of the former Longfellows. The executive chef, Christopher Smith, hails from the Pacific Northwest where he honed his skills at various high-end dining venues. I think of his cuisine as elevated French bistro fare and believe you will be impressed and delighted with the food and the venue.

We were finally able to secure a date for our induction dinner. It will take place at the Fort Orange Club where the kitchen is under the capable hands of Maitre Rotisseur Lou Agostinello. Our last dinner there was outstanding with elegant decor, delicious food and spot on service – everything a Chaine dinner should be. If you have not received your ribbons, I hope you can join us for a festive evening.
